Inside Stockholm's City Hall, an industrious team of chefs prepares for the prestigious Nobel Prize banquet this week. This annual event unites Nobel laureates, their families, members of the Swedish royal family, and distinguished guests in a spectacular celebration.
With over forty chefs collaborating, this year’s feast features a meticulously planned three-course meal set to serve 1,300 people. Pi Le and Tommy Myllymaki, renowned for their two-star Michelin restaurant on Djurgarden Island, are responsible for the first two courses. “We aim to express our culinary identity while adding a unique twist to familiar flavors,” Le expressed.
The final menu was designed following extensive trial runs in late September and will remain a closely-guarded secret until the guests are seated in the iconic Blue Hall, which features 59 dining tables ready for the evening’s festivities.
While the chefs have shared hints about the ingredients used, guests can expect an array of Nordic forest flavors. The first course will include dried porcini mushrooms, while the dessert will highlight wild raspberries and sloe berries. Additionally, guests will enjoy a selection of 400 bottles of champagne accompanying the starter.
For these chefs, the Nobel banquet transcends mere culinary skill—it’s a celebration of family bonds. After more than thirty years, the tableware has been upgraded, with oak knives handcrafted for the occasion, involving the help of Le's family, who contributed to making 1,300 knives from Swedish wood.
The dessert tells a personal story, drawn from the experiences of Nobel pastry chef Frida Backe, who infused childhood memories of forest adventures with her grandparents. Incorporating sloe berries into her creation demanded both ingenuity and patience, according to her.
The Nobel Prize banquet stands as a tribute not only to achievements in science, literature, and peace but also to the artistry of culinary creation and familial connection. This year’s event exemplifies how tradition and family underlie the banquet’s splendor.
From the kitchens of talented chefs to the royal tables, this showcase of artistry, local ingredients, and personal narratives makes the Nobel Prize banquet a unique fusion of history, culture, and shared memories.
